Preheat the oven to 450°F. Rinse and dry all produce. Drain and rinse the beans. Between two trays, divide the spinach, drained beans, tomatillo sauce, cream, and tomatoes. Season with salt and pepper and stir thoroughly.

Crack 2 eggs into each tray on top of the base. Season with salt and pepper. Cover the trays tightly with foil and bake 13-15 minutes until the whites are set and the yolks reach your desired doneness.

Meanwhile, lay the pitas on foil and drizzle each with olive oil; season. Stack, wrap in foil, and place directly on an oven rack. Warm 3-5 minutes until heated through. Carefully unwrap. Serve the baked trays topped with the cilantro sauce and crumbled cheese, with the warmed pitas on the side.
