1 each Bell Pepper
1 bunch Dill
1 ½ oz Feta Cheese
2 clove Garlic
2 tbsp Crème Fraîche

How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Small dice the zucchini. Stem the pepper, halve lengthwise, seed, and small dice. Peel and roughly chop the garlic. Quarter and deseed the lemon(s). Roughly chop the dill. In a bowl, combine the chicken with the garlic, a drizzle of olive oil, and the juice of 2 lemon wedges; toss to coat and marinate at least 10 minutes.

Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until tender. Drain and return to the pot. Drizzle with olive oil and stir.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the diced zucchini and pepper; season. Cook undisturbed 2-3 minutes until lightly browned. Continue stirring occasionally 2-3 minutes until softened. Transfer to the pot of cooked pasta. Cover to keep warm. Wipe out the pan.

Heat a drizzle of olive oil in the same pan over medium-high. Add the marinated chicken. Cook 6-9 minutes per side until browned and cooked through. Transfer to a board and slice on an angle. USDA minimum: 165°F for chicken.

Add the creme fraiche and the juice of 2 lemon wedges (4 wedges for 4 servings) to the pot of pasta and vegetables. Serve topped with the sliced chicken, chopped dill, and crumbled feta. Offer the remaining lemon wedges on the side.
