Ingredients
2 each Boneless, Skinless Chicken Breasts
12 oz Potatoes
6 oz Carrots
1 bunch Sage
1 oz Salted Butter
1 tbsp Apple Cider Vinegar
½ tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
¼ cup Buttermilk
1 tbsp Maple Syrup
How to make it
1
Preheat the oven to 450°F. Bring a medium pot of salted water (3/4 full) to a boil. Line a sheet pan with foil. Pat the protein dry; season both sides with salt, pepper, and half the spice blend. Transfer to the pan. Drizzle with olive oil. Roast 18-22 minutes until browned and cooked through. Transfer to a board and slice crosswise. USDA minimum: 165°F for chicken / 145°F for pork.
2
Meanwhile, rinse and dry all produce. Cut the potatoes into a medium dice. Peel the carrots; halve lengthwise and cut crosswise into 2-inch pieces. Pick and thinly slice the sage leaves.
3
Add the potatoes to the boiling water. Cook 16-20 minutes until fork-tender. Drain and return to the pot. Add the buttermilk and 1 tablespoon olive oil (2 tbsp for 4 servings); season. Mash to your desired consistency. Taste and season.
4
Line a separate sheet pan with foil. Spread the carrot pieces, drizzle with olive oil, season with salt, pepper, and the remaining spice blend; toss. Roast 16-18 minutes until browned and fork-tender. Air fryer option: 390°F for 9-12 minutes.
5
Heat a nonstick pan over medium-high. Add the maple syrup, vinegar (it may spatter), and as many sage leaves as you like; season. Cook stirring frequently 30 seconds to 1 minute until slightly thickened. For thicker cook longer; for thinner add water 1 tablespoon at a time. Remove from heat and stir in the butter. Taste and season. Serve the sliced protein with the roasted carrots and mashed potatoes. Top with the pan sauce.
