1 tsp Beef Broth Concentrate
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Halve, peel, and thinly slice the onions. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Pick the thyme leaves. Cut the baguette(s) crosswise into equal-sized pieces. Grate the grand cru on the large side of a box grater. Thinly slice the chives.

Heat a drizzle of olive oil in a medium pot over medium. Add the sliced onions; season. Cover and cook stirring occasionally 10-15 minutes until dark and caramelized (add water 1 tablespoon at a time if they start to burn). Add the garlic and thyme. Cook stirring occasionally 2-3 minutes until softened. Add the vinegar (it may spatter) and soy sauce. Cook stirring constantly 1-2 minutes until the liquid cooks off.

Add the butter and stir constantly 30 seconds to 1 minute until melted. Add the flour and stir constantly 1-2 minutes until combined. Add the stock, broth concentrate, and 1 cup water (2 cups for 4 servings). Cook stirring constantly and scraping up any fond 2-3 minutes until slightly thickened. Season and remove from heat.

Place 2 oven-safe bowls (4 for 4 servings) on a sheet pan. Divide the soup between the bowls and top each with enough baguette pieces to cover. Top evenly with the grated grand cru. Bake 4-6 minutes until the cheese is melted. For a golden top, broil 2-3 minutes, watching closely. Let stand 2 minutes. Serve garnished with the sliced chives.
