How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Drain and rinse the chickpeas. In the tray, combine the spinach, tomatoes, drained chickpeas, tomato sauce, romesco sauce, peppers, and as much red pepper flake as you like. Stir to combine. Add 1 tablespoon water. Season with salt and pepper and stir thoroughly.

Crack the eggs into the tray of prepared base. Season with salt and pepper. Cover tightly with foil and bake 18-20 minutes until the whites are set and the yolks reach your desired doneness.

Meanwhile, lay the pitas on foil and drizzle each with olive oil; season if desired. Stack, wrap in foil, and place directly on an oven rack. Warm 3-5 minutes until heated through. Serve the baked tray topped with labneh and crumbled feta. Offer the warmed pitas on the side.
