8 oz Snow Peas
1 cup Long Grain White Rice
⅔ cup Kimchi
1 tbsp Gochujang
4 tbsp Soy Glaze
4 tbsp Mayonnaise
6 oz Baby Spinach

How to make it

Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Rinse and drain the rice. Remove tough strings from snow peas if desired. Between two trays, divide the spinach, rice, sauteed aromatics, sesame oil, snow peas, and kimchi. Add 1 cup water per tray. Season with salt and pepper and stir.

Cover the trays tightly with foil and bake 30 minutes. Remove the foil (leave oven on) and stir. Make 2 shallow wells per tray. Crack an egg into each; season. Return to the oven uncovered 5-7 minutes until the whites are set and yolks reach your desired doneness.

In a bowl, combine the mayonnaise, soy glaze, and as much gochujang as you like. Serve the baked trays drizzled with the sauce. Top with sesame seeds.
