How to make it

Take the honey and noodles out of the refrigerator. Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Remove tough strings from snow peas if desired. Separate the noodles by hand and add to the tray. Add the spinach, snow peas, and sauteed aromatics; stir. Add 2 tablespoons water. Season and stir thoroughly.

Cover tightly with foil and bake 8-10 minutes until the snow peas are fork-tender and the spinach is wilted. Remove the foil. In a bowl, combine the tahini, soy sauce, peanut butter spread, sesame oil, vinegar, honey (knead the packet), 2 tablespoons water, and as much sambal oelek as you like. Add the sauce to the baked tray; stir thoroughly. Serve topped with sesame seeds, coconut chips, and peanuts.
