ยฝ lb Lo Mein Noodles
10 oz Baby Bok Choy
6 oz Carrots
2 clove Garlic
1 each Lime
1 tbsp Smooth Peanut Butter Spread
1 tbsp Yellow Curry Paste
3 tbsp Soy Glaze
1 tsp Black & White Sesame Seeds
1 tbsp Sambal Oelek
How to make it

Drain the tofu and place on a paper towel-lined plate. Cover with several layers of paper towels and press with a heavy pot or pan. Let press at least 10 minutes to release excess liquid.

Bring a medium pot of water (3/4 full) to a boil. Rinse and dry all produce. Peel the carrots and thinly slice on an angle. Trim the bok choy root ends and thinly slice. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Halve the lime(s). In a bowl, whisk together the peanut butter spread, soy glaze, lime juice to taste, 1/4 cup water (1/2 cup for 4 servings), and as much curry paste and sambal oelek as you like.

Transfer the pressed tofu to a board and cut into a medium dice. Heat a thin layer of oil in a large high-sided pan over medium-high. When a piece of tofu sizzles immediately on contact, add the tofu in an even layer. Cook undisturbed 4-5 minutes until browned. Continue stirring occasionally 4-5 minutes until browned on all sides. Transfer to a plate and season immediately with salt if desired. Wipe out the pan.

Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 2-4 minutes until tender. Drain and rinse under warm water 30-60 seconds to prevent sticking.

Heat a drizzle of olive oil in the same pan over medium-high. Add the carrots in an even layer. Cook undisturbed 2-3 minutes until lightly browned. Add the bok choy; season if desired. Cook stirring occasionally 1-2 minutes until slightly softened. Add the garlic; season if desired. Cook stirring occasionally 2-3 minutes until softened.

Add the cooked noodles, cooked tofu, and sauce (it may spatter). Cook stirring frequently 1-2 minutes until thoroughly combined and the sauce is slightly thickened. Remove from heat. Taste and season. Serve topped with sesame seeds.
