How to make it
- Preheat the oven to 450°F. Rinse and dry all produce. In the baking tray, combine the spinach, gnocchi, red pepper pesto, cream (shake the packet), corn, and tomatoes. Add 3/4 cup water per tray, season with salt and pepper, and stir thoroughly to combine.
- Cover tightly with foil and bake 30 minutes. Remove the foil (leave oven on). Place the goat cheese whole in the center of the tray and return uncovered for 4-6 minutes until the goat cheese softens and the gnocchi are tender. Stir together to fully combine. Serve topped with parmesan.
