Preheat the oven to 450°F. Rinse and dry all produce. In the baking tray, combine the spinach, gnocchi, red pepper pesto, cream (shake the packet), corn, and tomatoes. Add 3/4 cup water per tray, season with salt and pepper, and stir thoroughly to combine.

Cover tightly with foil and bake 30 minutes. Remove the foil (leave oven on). Place the goat cheese whole in the center of the tray and return uncovered for 4-6 minutes until the goat cheese softens and the gnocchi are tender. Stir together to fully combine. Serve topped with parmesan.
