Roughly chop the figs. Grate the cheddar on the large side of a box grater. In a large bowl, whisk together the mustard, lemon zest, honey, and the juice of 2 lemon wedges (4 wedges for 4 servings). Season.

Heat the butter in a nonstick pan over medium-high until melted. Add the pecans. Cook stirring constantly 2-3 minutes until the foam subsides and the butter smells nutty. Carefully transfer to the bowl of dressing; stir. Wipe out the pan.

Heat the same pan over medium-high. Add the grated cheddar in an even layer. Cook undisturbed 6-8 minutes until melted, lightly browned, and crispy. Transfer to a plate; cool 1 minute, then break into large pieces.
