Bring a medium pot of salted water to a boil. Rinse and dry all produce. Peel and medium dice the turnip. Peel the carrots and thinly slice on an angle. Thinly slice the celery on an angle. Peel and finely chop the ginger. Trim the bok choy root end and roughly chop. In a bowl, combine the soy glaze, soy marinade, 2 tablespoons water, and as much gochujang as you like; season.

Heat 2 teaspoons olive oil in a large pan over medium-high. Add the turnip, carrots, and celery; season. Cook stirring occasionally 6-8 minutes until softened.

Add the ginger and bok choy; season (add a drizzle of oil if dry). Cook stirring frequently 2-3 minutes until the bok choy leaves are wilted. Taste and season.

While the bok choy cooks, add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 2-4 minutes until tender. Drain thoroughly.

Add the cooked noodles and sauce to the pan of vegetables. Cook over medium-high, stirring vigorously, 1-2 minutes until combined. Remove from heat and stir in the creme fraiche. Taste and season.
