How to make it

Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Quarter the limes. Stem the peppers, halve lengthwise, seed and devein, then thinly slice crosswise. Wash your hands and cutting board immediately after. In a bowl, toss together the cabbage and carrots, cilantro sauce, and the juice of 2 lime wedges (4 wedges for 4 servings); season with salt and pepper.

Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the chorizo and break it apart with a spoon. Cook undisturbed 3-4 minutes until lightly browned. Add the pepper strips and white scallion bases; season with salt and pepper. Cook stirring occasionally 3-4 minutes until slightly softened. Add the sugar, 2 tablespoons water (4 tbsp for 4 servings), and as much chile paste as you like; season. Stir frequently 1-2 minutes until combined and the chorizo is cooked through. Remove from heat.

Just before serving, wrap the tortillas in a damp paper towel and microwave on high 1 minute until warm. (Or wrap in foil and heat on an oven rack for 7-9 minutes.) Carefully unwrap. Build the tacos with the warmed tortillas, cooked sausage and peppers, and sour cream. Top with green scallion tops and crispy onions. Serve with the slaw and remaining lime wedges on the side.
