1 each Peach
12 oz Potatoes
2 tbsp Vegetarian Worcestershire Sauce
1 tbsp Maple Syrup
6 oz Green Beans
2 tbsp Crème Fraîche
1 oz Salted Butter
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Bring a medium pot of salted water (3/4 full) to a boil. Cut the potatoes into a medium dice. Snap the stem ends off the green beans. Halve, pit, and small dice the peach(es). Place a piece of foil on a board. Put the diced peach, butter, maple syrup, and half the Worcestershire sauce on one side; season. Fold in half and seal the edges to form a packet.

Line a sheet pan with foil. Pat the pork dry; drizzle with olive oil, season, and turn to coat. Place on one side of the pan. Transfer the foil packet to the other side. Roast 20-26 minutes for medium (center may be slightly pink) or to your desired doneness. USDA minimum: 145°F for pork. Transfer the pork to a board and rest 5 minutes. Carefully open the foil packet; stir the compote. Slice the pork crosswise against the grain.

Meanwhile, add the potatoes to the boiling water. Cook 16-20 minutes until fork-tender. Drain and return to the pot. Add the creme fraiche and mash to your desired consistency. Taste and season.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the green beans. Cook stirring occasionally 3-4 minutes until slightly softened. Add 2 tablespoons water (4 tbsp for 4 servings). Cook stirring frequently 30 seconds to 1 minute until the water cooks off. Add the remaining Worcestershire sauce; season. Cook stirring frequently 30 seconds to 1 minute until coated. Serve the sliced pork with the green beans and mashed potatoes. Top the pork with the maple-peach compote.
