10 oz Baby Bok Choy
3 tbsp Soy Glaze
2 tbsp Tahini
3 tbsp East Asian-Style Sautéed Aromatics
1 tbsp Vegetarian Ponzu Sauce
1 tbsp Sesame Oil
1 tbsp Sambal Oelek
1 tsp Black & White Sesame Seeds
How to make it

Bring a medium pot of water (3/4 full) to a boil. Rinse and dry all produce. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Trim the bok choy root ends and roughly chop. In a bowl, whisk together the tahini, soy glaze, ponzu sauce, 2 tablespoons water (4 tbsp for 4 servings), and as much sambal oelek as you like.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the pork. Cook stirring frequently, breaking the meat apart, 5-7 minutes until browned. Drain off excess oil. Add the garlic, sauteed aromatics (it may spatter), and bok choy. Cook stirring frequently 2-3 minutes until the bok choy is softened and the pork is cooked through. Taste and season.

Add the noodles to the boiling water, stirring to separate. Cook stirring occasionally 3-5 minutes until tender. Drain and rinse under warm water 30-60 seconds. Return to the pot. Add the sesame oil and stir to coat.

Add the sauce and cooked pork and bok choy to the pot of noodles; season. Cook over medium-high, stirring constantly, 1-2 minutes until the noodles are thoroughly coated. Taste and season. Serve topped with sesame seeds.
