3 oz Baby Spinach
¼ cup Grated Parmesan Cheese
⅓ cup Béchamel Sauce
4 oz Fresh Mozzarella Cheese
3 tbsp Romesco Sauce (contains almonds)
1 each 8-oz can Tomato Sauce
1 oz Sliced Roasted Red Peppers
1 each Single-Use Aluminum Tray
How to make it

Position a rack in the center of the oven and heat to 450°F. Rinse and dry the spinach. In a bowl, combine the bechamel, tomato sauce, and romesco sauce; season. Spread about 1/3 of the sauce in a thin layer on the bottom of the tray. Add half the spinach, then pasta sheets (trim to fit). Repeat with more sauce, half the parmesan, and the remaining spinach. Add a final layer of pasta sheets and remaining sauce. Top with the peppers and mozzarella (torn into small pieces). Season with salt and pepper.

Cover tightly with foil and bake 14 minutes. Remove the foil (leave oven on) and return to the oven 4-6 minutes until the cheese is melted and the pasta is cooked through. Let stand 3 minutes. Serve topped with the remaining parmesan.
