Rinse and dry all produce. Bring a medium pot of salted water to a boil. Peel and thinly slice the shallot. Peel and mince the garlic. Remove and discard the collard green stems; roughly chop the leaves.

Add the pasta to the boiling water. Cook uncovered 8-10 minutes until tender. Drain, reserving 1/2 cup pasta water. Set aside in a warm place.

Once the pasta has been cooking about 5 minutes, heat 1 teaspoon olive oil in a nonstick pan over medium-high. Add the shallot; season. Cook stirring occasionally 30 seconds to 1 minute until fragrant. Add the honey, vinegar, raisins, and as much red pepper flake as you like. Cook stirring occasionally 1-2 minutes until combined. Transfer to a bowl; taste and season. Wipe out the pan.

Cook stirring occasionally 4-6 minutes until wilted and the water cooks off. Add the cooked pasta and remaining pasta water. Cook stirring vigorously 1-2 minutes until combined and heated through. Taste and season. Divide between 2 dishes. Wipe out the pan.

Pat the barramundi dry; season the skinless sides with salt and pepper. Heat 1 teaspoon olive oil in the same pan over medium-high. Add skin-side down. Cook 5-7 minutes until browned and crispy. Flip; season. Cook 1-2 minutes until cooked through. USDA minimum: 145ยฐF for fish. Divide between the dishes of pasta. Top with the agrodolce.
