½ cup Long Grain White Rice
8 oz Cauliflower Florets
1 each Bell Pepper
2 each Scallions
3 tbsp Sweet Chili Sauce
1 tbsp Sambal Oelek
2 tbsp Mayonnaise
½ tbsp Vadouvan Curry Powder
½ cup Plain Nonfat Greek Yogurt
¼ cup Cornstarch
How to make it

Preheat the oven to 450°F. Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork and cover to keep warm.

Rinse and dry all produce. Stem the peppers, halve lengthwise, seed, and slice crosswise into thin strips. Cut the white scallion bottoms into 1-inch pieces; thinly slice the green tops. Cut the paneer into a small dice. In a large bowl, whisk together the mayonnaise, sweet chili sauce, and as much sambal oelek as you like for heat.

Line a sheet pan (or 2 for 4 servings) with foil. Toss the cauliflower, pepper strips, and scallion whites with olive oil, the curry powder, salt, and pepper, then spread in an even layer. Roast 22-24 minutes until lightly browned and fork-tender.

Once the vegetables have been roasting about 10 minutes, season the diced paneer with salt and pepper, then toss with the cornstarch to coat. Heat a thin layer of oil in a nonstick pan over medium-high. When a pinch of cornstarch sizzles immediately, add the paneer in a single layer (discard excess starch). Cook undisturbed 3-4 minutes until golden, the cheese may pop, so be careful. Stir and cook 3-4 minutes more until golden on all sides. Transfer to the bowl of sauce and stir to coat; taste and season.

Stir the roasted vegetables into the cooked rice; taste and season. Divide into bowls and top with the sauced paneer and any remaining sauce. Finish with a dollop of yogurt and the green scallion tops.
