How to make it

Preheat the oven to 450°F. Rinse and dry all produce. In the tray(s), combine the cheese curds (torn into pieces), polenta, cream (shake the packet), and tomatoes. Add 1 1/2 cups water per tray. Season with salt and pepper and stir. Cover tightly with foil and bake 20 minutes. Leave the oven on and remove.

Make shallow wells in the center of the tray(s). Crack an egg into each well; season with salt and pepper. Dot evenly with half the butter. Return to the oven uncovered 5-7 minutes until the eggs are cooked through.

Meanwhile, in a bowl, whisk together the honey, vinegar, and 1 tablespoon olive oil (2 tbsp for 4 servings); season with salt and pepper. Add the arugula and toss to combine. Serve the baked tray(s) alongside the salad. Top the salad with almonds.
