How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Snap the woody ends off the asparagus. Halve, peel, and thinly slice the shallot(s).

In a bowl, combine the biscuit mix, sour cream, and 2 tablespoons water (4 tbsp for 4 servings). Gently stir until just combined, do not overmix. Lightly oil one side of a sheet pan. Scoop 2 equal dollops (4 for 4 servings) of biscuit dough onto the oiled side.

Place the asparagus on the other side of the pan. Drizzle with olive oil, season with salt and pepper, and toss to coat. Arrange in an even layer. Bake 12-16 minutes until the asparagus is fork-tender and the biscuits are set and cooked through. Let the biscuits stand 2 minutes.

Pat the steaks dry and season both sides with salt and pepper. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook 4-6 minutes per side for medium-rare (125°F) or to your desired doneness. Transfer to a board and rest 5 minutes. USDA minimum: 145°F for steak. Leave the fond.
