2 each Top Sirloin Steaks
12 oz Potatoes
2 oz Arugula
1 oz Salted Butter
2 clove Garlic
1 each Lemon
1 tbsp Capers
1 tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
How to make it

Take the butter out to soften. Preheat the oven to 450ยฐF. Rinse and dry all produce. Cut the potatoes into 1/2-inch sticks. Roughly chop the capers. Quarter and deseed the lemon. Peel 1 garlic clove and finely grate into a paste.

In a bowl, combine the potato sticks, a drizzle of olive oil, salt, pepper, and all but a pinch of the spice blend; toss. Spread on a sheet pan in an even layer. Roast 21-23 minutes until browned and fork-tender.

Pat the steaks dry; season all sides with salt and pepper. Heat a drizzle of olive oil in a nonstick pan over medium-high. Cook turning occasionally 8-10 minutes for medium-rare (125ยฐF) or to your desired doneness. Transfer to a board and rest 5 minutes. USDA minimum: 145ยฐF for steak.

In a bowl, combine the softened butter, chopped capers, remaining spice blend, the juice of 1 lemon wedge, and as much garlic paste as you like. Mash with a fork until thoroughly combined.

In a large bowl, whisk together the juice of the remaining lemon wedges and a drizzle of olive oil; season. Just before serving, add the arugula and gently toss. Slice the steaks crosswise against the grain. Serve with the oven fries and salad. Top the steaks with the compound butter.
