Preheat the oven to 450°F. Rinse and dry all produce. Line two sheet pans with foil. Add the Brussels sprouts and sweet potatoes to one pan; drizzle with olive oil, season, and toss to coat. Bake 20-25 minutes until browned and fork-tender. Toss with sesame oil and ponzu sauce.

Top with half the hoisin dressing (keep remaining separate from raw fish), then with the breadcrumbs and sesame seeds (press to adhere). Bake 10-15 minutes until the fish is cooked through. USDA minimum: 145°F for fish. Serve with the finished vegetables. Top the fish with the remaining hoisin dressing.
