2 each Scallions
3 tbsp Ketchup
1 tbsp Sesame Oil
1 tbsp Vegetarian Ponzu Sauce
1 tsp Black & White Sesame Seeds
How to make it

Arrange oven racks in the upper and lower thirds of the oven; preheat to 450Β°F. Rinse and dry all produce. Trim the squash and halve lengthwise; scoop out seeds and cut crosswise into 1/4-inch pieces. Halve and peel the onion; cut into 1/2-inch wedges. Slice the scallions, keeping the white bases and green tops separate. In a bowl, combine the ketchup and as much gochujang as you like; season.

Spread the squash and onion wedges on a sheet pan. Drizzle with sesame oil; season. Toss to coat and arrange in an even layer. Place on the lower oven rack.

Line a separate sheet pan with foil and lightly oil the center. In a bowl, combine the beef, white scallion bases, breadcrumbs, and egg; season. Gently mix. Transfer to the oiled pan and shape into a loaf about 7x3 inches. Transfer half the glaze to a separate bowl for serving. Top the meatloaf evenly with the remaining glaze. Place on the upper oven rack and bake 16-18 minutes until browned and cooked through. USDA minimum: 160Β°F for beef. Rest 2 minutes. (Roast the vegetables on the lower rack 21-23 minutes until browned and fork-tender.)

Add the green scallion tops and ponzu sauce to the vegetables; toss. Transfer the rested meatloaf to a board and slice crosswise. Serve with the finished vegetables. Top the meatloaf with the reserved glaze and sesame seeds.
