½ oz Sweety Drop Peppers
1 tbsp White Balsamic Vinegar
1 oz Goat Cheese
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Line a sheet pan (or 2 for 4 servings) with foil. Place a large piece of foil on a work surface. Toss the blueberries with the balsamic vinegar, sugar, butter, and 1 teaspoon water (2 tsp for 4 servings); season with salt and pepper. Place on one side of the foil, fold in half, and fold the three open edges to seal the packet. Transfer to one side of the sheet pan.

Pat the pork dry and season with salt, pepper, and the spice blend. Place on the other side of the sheet pan. Arrange the sweet potato wedges around the pork and season with olive oil, salt, and pepper. Roast 25-30 minutes until the pork reaches 145°F and the sweet potatoes are fork-tender. Let the pork rest 5 minutes, then slice crosswise. Carefully open the foil packet — steam will escape.

Just before serving, in a large bowl, whisk together the white balsamic vinegar and 1 tablespoon olive oil (2 tbsp for 4 servings). Add the arugula, season with salt and pepper, and toss to combine. Serve the sliced pork with the roasted sweet potatoes and salad. Spoon the blueberry sauce over the pork. Top the salad with the peppers and crumbled goat cheese.
