10 oz Smoky-Flavored Poblano Pork Sausage
2 each Burger Buns
3 oz Shishito Peppers
⅓ cup Crispy Onions
2 tbsp Mayonnaise
1 tbsp Fig Spread
2 oz Shredded Cheddar & Monterey Jack Cheese Blend
¼ cup Panko Breadcrumbs
1 each Single-Use Aluminum Tray
How to make it

Preheat the oven to 400°F. Rinse and dry the peppers. In a bowl, combine the sausage and breadcrumbs; gently mix. Form into two 1/2-inch-thick patties; place on one side of the tray. Spread the peppers on the other side; drizzle with olive oil and season. Toss and arrange in an even layer.

Bake uncovered 15 minutes. Remove from the oven (leave oven on). Carefully flip the partially cooked patties. Top evenly with half the cheddar and Monterey Jack. Return to the oven 5-7 minutes until the peppers are fork-tender, the cheese is melted, and the patties are cooked through. USDA minimum: 160°F for pork.

Wrap the buns in foil and place on an oven rack. Warm 5-7 minutes until heated through. In a bowl, combine the mayonnaise and fig spread. Build the burgers with the warmed buns, fig mayo, cooked patties, and crispy onions. Serve with the roasted peppers.
