How to make it
- Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Shuck the corn and cut off the kernels. Stem the peppers, halve lengthwise, seed, and finely chop. Wash hands immediately after.
- Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until al dente. Drain, reserving 1 cup pasta water (2 cups for 4 servings).
- Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the sausage and break it apart. Cook undisturbed 3-4 minutes until lightly browned.
- Add the white scallion bases, corn, and as much of the chopped peppers as you like. Cook stirring occasionally 3-4 minutes until browned. Add the tomato paste. Cook stirring constantly 1-2 minutes until combined and the sausage is cooked through. Remove from heat.
- Add the cooked sausage and vegetables and half the reserved pasta water to the pot. Cook over medium-high, stirring constantly, 1-2 minutes until the pasta is coated, adding more water gradually if needed. Add the creme fraiche and as much hot sauce as you like; stir until combined. Taste and season. Serve topped with the green scallion tops.
