Rinse and dry all produce. Halve, peel, and thinly slice the shallot. Thinly slice the mushrooms. Stem the pepper, halve lengthwise, seed, and thinly slice crosswise. Wash hands immediately after.

Heat a drizzle of olive oil in a large pan over medium-high. Add the sausage. Cook stirring frequently, breaking the meat apart, 3-4 minutes until lightly browned. Add the sliced shallot, mushrooms, and pepper; season. Cook undisturbed 2-3 minutes until lightly browned.
