How to make it

Rinse and dry all produce. Thinly slice the mushrooms. In a bowl, combine the mayonnaise and as much sambal oelek as you like. In a separate bowl, combine the cabbage and carrots and sesame dressing; season and stir.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the peppers in an even layer. Cook undisturbed 2-3 minutes until lightly browned; season. Continue stirring occasionally 2-3 minutes until charred and softened. Transfer to a bowl. Stir in the ponzu sauce. Cover with foil. Wipe out the pan.
