1 ½ tsp Calabrian Chile Paste
2 tbsp Mayonnaise
1 oz Garlic & Herb Flavored Butter

How to make it

Take the butter out to soften. Position a rack in the center of the oven and heat to 450°F. Rinse and dry all produce. Trim the stem ends from the green beans. Add to the tray, drizzle with olive oil, season with salt and pepper, and toss to coat in an even layer on one side. In a bowl, combine the breadcrumbs, cheddar and Monterey Jack, mayonnaise, pepper sofrito, and as much chile paste as you like; season with salt and pepper and stir to combine.

Pat the chicken dry and season both sides with salt and pepper. Place on the other side of the tray. Spread the cheesy breadcrumb mixture evenly over the top. Bake uncovered 20-22 minutes until the green beans are tender and the chicken is cooked through. USDA minimum: 165°F for chicken.

Meanwhile, place the potatoes in a microwave-safe bowl. Drizzle with olive oil, season with salt and pepper, and toss to coat. Cover with a damp paper towel, tucking the edges around the potatoes. Microwave on high 9-12 minutes until fork-tender. Add the softened butter and sour cream and mash to your desired consistency. Taste and season. Serve alongside the baked chicken and green beans.
