How to make it
- Take the butter out to soften. Preheat the oven to 450°F. Rinse and dry all produce. In a bowl, combine the breadcrumbs, mayonnaise, cheddar and Monterey Jack, and garlic pesto; season and stir.
- Pat the chicken dry; season both sides with salt and pepper. Place on one side of the tray(s). Top evenly with the breadcrumb mixture. Add the broccoli to the other side; drizzle with olive oil and season. Toss to coat. Bake uncovered 20-22 minutes until the broccoli is browned and fork-tender and the chicken is cooked through. USDA minimum: 165°F for chicken.
- Once the chicken has been baking about 10 minutes, halve the baguette(s) lengthwise. Place directly on an oven rack and bake 5-7 minutes until toasted. Spread the softened butter on the cut sides. Serve the baked chicken and broccoli with the truffle butter toast.
