½ cup Long Grain White Rice
4 each Flour Tortillas
1 each Poblano Pepper
2 tbsp Tomato Paste
2 oz Monterey Jack Cheese
¼ cup Sour Cream
How to make it

Preheat the oven to 450°F. Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed and tender. Fluff with a fork and transfer to a large bowl.

Grate the Monterey Jack on the large side of a box grater. Rinse and dry the peppers. Stem them, halve lengthwise, seed and devein, then slice crosswise into thin strips. Wash your hands and cutting board immediately after handling.

Pat the protein dry and season with salt and pepper. Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add in an even layer and cook undisturbed 3-4 minutes until lightly browned. Add the pepper strips; season with salt and pepper. Cook stirring frequently 2-3 minutes until slightly softened. Stir in the tomato paste and cook 1-2 minutes. Add 1/4 cup water (1/2 cup for 4 servings); stir frequently 1-2 minutes until the sauce thickens and the protein is cooked through. Remove from heat. Transfer to the bowl of rice, add half the sour cream, and stir to combine. Taste and season.

Lay the tortillas flat. Spread about half the filling in the bottom of the baking dish. Divide the remaining filling among the tortillas, roll each one tightly, and place seam-side down in the dish. Top evenly with the grated Monterey Jack. Bake 7-9 minutes until lightly browned and the cheese is melted. Let stand 2 minutes before serving.

Season the remaining sour cream with salt and pepper. Serve the enchiladas topped with the seasoned sour cream.
