1 ½ tsp Calabrian Chile Paste
2 tbsp Mascarpone Cheese

How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Strip the corn kernels from the cobs. Stem the peppers, halve lengthwise, seed and devein, then cut into a medium dice. Roughly chop the pistachios.

Add the pasta to the boiling water. Cook stirring occasionally 8-10 minutes until tender. Drain, reserving 1/2 cup pasta water (1 cup for 4 servings), and return to the pot.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the pancetta and cook stirring occasionally 4-5 minutes until lightly browned and cooked through. Transfer to a paper towel-lined plate, leaving any fond in the pan.

Serve topped with the green scallion tops, parmesan, and chopped pistachios.
