Rinse and dry all produce. Remove the plastic liner from the prosciutto, stack the slices, and thinly slice crosswise. Slice the scallions, keeping the white bases and green tops separate. Halve, peel, and small dice the onion(s).

Heat a drizzle of olive oil in a medium pot over medium-high. Add the sliced prosciutto. Cook stirring frequently, breaking apart clumps, 4-5 minutes until crispy. Transfer to a paper towel-lined plate, leaving the fond.
