½ cup Pearled Barley
2 ear Corn
1 tbsp Hot Sauce
2 tsp Smoky Honey Habanero Spice Blend (Honey Granules, Brown Sugar, Smoked Paprika, Salt & Habanero Powder)
¼ cup Sour Cream
2 tsp Honey
2 each Scallions
How to make it

Bring a medium pot of salted water (3/4 full) to a boil. Add the barley and cook uncovered 28-30 minutes until tender. Drain thoroughly and return to the pot.

Rinse and dry all produce. Strip the corn kernels from the cobs. Slice the scallions, keeping the white bases and green tops separate. In a bowl, combine the sour cream, 1 teaspoon water (2 tsp for 4 servings), and up to half the spice blend to taste; season with salt and pepper. In a separate bowl, whisk together the honey, 2 tablespoons water (4 tbsp for 4 servings), and as much hot sauce as you like for the glaze.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the corn and white scallion bases; season with salt and pepper. Cook stirring occasionally 3-4 minutes until softened (corn may pop). Transfer to a bowl, season to taste, and cover with foil. Wipe out the pan.

Pat the fish dry and season both sides with salt and pepper. Heat a drizzle of olive oil in the same pan over medium. Add the fish skin-side up and loosely tent with foil. Cook 3-5 minutes until lightly browned. Flip and cook 2 minutes. Add the glaze (it may spatter) and spoon it constantly over the fish 1-2 minutes until coated and cooked through. USDA minimum: 145°F for fish.

Stir the cooked corn, a drizzle of olive oil, and as much of the remaining spice blend as you like into the barley. Taste and season. Plate the barley and top with the glazed fish and any pan glaze. Finish with the spiced sour cream and green scallion tops.
