How to make it

Rinse and drain the rice. Combine with a big pinch of salt and 1 1/4 cups water (2 1/2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 23-25 minutes until absorbed and tender. Fluff with a fork.

Rinse and dry all produce. Trim the bottom 1/2 inch from the broccoli stem and cut into small florets. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Quarter the limes. In a bowl, whisk together the soy glaze, honey, the juice of 2 lime wedges (4 wedges for 4 servings), and as much sambal oelek as you like.

Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the broccoli; season with salt and pepper. Cook stirring occasionally 3-4 minutes until lightly browned. Add the garlic and stir frequently 30 seconds to 1 minute until slightly softened. Add 1/4 cup water (1/2 cup for 4 servings). Loosely tent with foil and cook undisturbed 2-3 minutes until the broccoli is tender and the water has cooked off. Transfer to a bowl. Wipe out the pan.

Pat the protein dry and season both sides with salt and pepper. Heat a drizzle of olive oil in the same pan over medium. Add skin-side up and loosely tent with foil. Cook 3-5 minutes until lightly browned. Flip and cook 2 minutes. Add the butter and sauce (it may spatter); spoon frequently over the protein 1-2 minutes until coated and cooked through. Remove from heat. Serve the rice topped with the cooked protein, any pan sauce, and the cooked broccoli. Scatter sesame seeds on top and serve with the remaining lime wedges.
