Ingredients
10 oz Hot Italian Pork Sausage
6 oz Mafalda Pasta
1 bunch Sage
2 clove Garlic
8 oz Broccoli
1 each Shallot
ΒΌ cup Cream
1 tbsp Rice Vinegar
ΒΌ cup Grated Parmesan Cheese
How to make it
1
Bring a medium pot of salted water (3/4 full) to a boil. Rinse and dry all produce. Pick the sage leaves from the stems. Peel and roughly chop 2 garlic cloves (4 for 4 servings). Halve, peel, and thinly slice the shallot(s). Trim the bottom 1/2 inch from the broccoli stem and cut into small florets.
2
Heat a thin layer of oil in a nonstick pan over medium-high. When a sage leaf sizzles immediately on contact, add all the leaves in an even layer. Cook stirring occasionally 1-2 minutes until dark green and crispy. Transfer to a paper towel-lined plate (leave the oil in the pan) and season immediately with salt.
3
Heat the sage oil over medium-high. Add the sausage and break it apart. Cook undisturbed 5-6 minutes until browned. Add the garlic and shallot(s); season. Cook stirring frequently 2-3 minutes until softened and the sausage is cooked through. Add the vinegar (it may spatter) and cream (shake the packet); season. Stir frequently 30 seconds to 1 minute until combined. Remove from heat.
4
Add the pasta to the boiling water. Cook uncovered 6 minutes. Add the broccoli florets and cook 4-6 minutes more until the broccoli is tender and the pasta is al dente. Drain, reserving 1/2 cup cooking water (1 cup for 4 servings), and return to the pot.
5
Add the sausage and sauce and half the reserved cooking water to the pot. Cook over medium-high, stirring constantly, 1-2 minutes until the pasta is coated, adding more water gradually if needed. Taste and season. Serve topped with the fried sage leaves and parmesan.
