Ingredients
10 oz Shrimp (peeled & deveined)
1 each Pasture-Raised Eggs
½ cup Long Grain White Rice
6 oz Carrots
2 each Scallions
1 each Poblano Pepper
1 tbsp Sweet White Miso Paste
1 tbsp Soy Sauce
2 tsp Honey
How to make it
1
Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork.
2
Rinse and dry all produce. Peel the carrots and thinly slice on an angle. Slice the scallions on an angle, keeping the white bases and green tops separate. Stem the peppers, halve lengthwise, seed, and medium dice. Wash hands immediately after. Beat the egg(s) with salt and pepper in a bowl. In a separate bowl, whisk together the miso paste, honey, and 2 tablespoons hot water (4 tbsp for 4 servings) until the miso dissolves.
3
Heat a drizzle of olive oil in a large nonstick pan over medium-high. Add the diced peppers and carrots; season. Cook stirring occasionally 3-4 minutes until lightly browned and slightly softened. Add the white scallion bases; season. Cook stirring frequently 1-2 minutes until slightly softened. Push the vegetables to one side; add a drizzle of oil to the other side, then add the beaten egg(s). Cook stirring constantly 30 seconds to 1 minute until cooked through. Stir together with the vegetables. Transfer to a large bowl and cover with foil. Wipe out the pan.
4
Heat a drizzle of olive oil in the same pan over medium-high. Add the cooked rice in an even layer. Cook undisturbed 3-4 minutes until slightly crispy. Add the soy sauce (it may spatter). Cook stirring frequently 30 seconds to 1 minute until combined. Transfer to the bowl of vegetables and egg; stir. Taste and season. Cover with foil. Wipe out the pan.
5
Pat the shrimp dry; season. Heat a drizzle of olive oil in the same pan over medium-high. Add in an even layer. Cook undisturbed 1-2 minutes until slightly opaque. Add the glaze (it may spatter). Cook stirring frequently 1-2 minutes until the shrimp are coated, opaque, and cooked through. Serve the fried rice topped with the cooked shrimp (including any glaze). Finish with the green scallion tops.
