Ingredients
3 oz Diced Pancetta
2 each Pasture-Raised Eggs
1 each 15.5-oz can Pinto Beans
3 oz Baby Spinach
ΒΌ cup Cilantro Sauce
2 tbsp Grated Cotija Cheese
ΒΌ cup Cream
2 each Pocketless Pitas
4 oz Grape Tomatoes
1 each 8-oz can Tomato Sauce
2 tsp Chipotle Chile Paste
1 oz Tomato & Chipotle Flavored Butter
1 each Single-Use Aluminum Tray
How to make it
1
Take the butter out to soften. Preheat the oven to 450Β°F. Rinse and dry all produce. Drain and rinse the beans. In the tray, combine the spinach, tomato sauce, drained beans, cream, tomatoes, pancetta, and as much chile paste as you like; stir thoroughly. Cover tightly with foil and bake 15 minutes. Leave the oven on and remove.
2
Remove the foil. Stir and gently press the tomatoes with the back of a spoon to burst. Make 2 shallow wells in the partially cooked base. Crack an egg into each well; season with salt and pepper. Return to the oven uncovered 7-9 minutes until the egg whites are set, the yolks reach your desired doneness, and the pancetta is cooked through.
3
Meanwhile, lay the pitas on a piece of foil and spread the softened butter evenly on top; season with salt and pepper. Stack, wrap in the foil, and place directly on an oven rack. Warm 5-7 minutes until heated through. Carefully unwrap. Serve the baked tray topped with cilantro sauce and cheese, with the warmed pitas on the side.
