How to Cook
Step 1
Crisp the tortillas: Preheat oven to 400°F. Arrange corn tortillas in single layer directly on oven racks or on baking sheet. Bake, flipping halfway through, until crisp and lightly golden, 8 to 10 minutes. Set aside.
Step 2
Grill the vegetables: Meanwhile, heat 1 tbsp olive oil in large nonstick skillet over medium-high heat. Add mushrooms and just half the onion. Cook, stirring occasionally, until mushrooms have released their moisture, and onions are soft, 6 to 8 minutes. Add zucchini, and cook until just warmed though
Step 3
Smash the beans: Combine black beans, 1/4 cup water, and 1/4 tsp salt to small pot over medium heat. Use back of fork to mash beans until few whole beans remain, and cook until heated through.
Step 4
Build the tostadas: Lay baked tortillas on clean surface. spread thin layer of mashed beans over each and top with warm vegetables. Dollop each with "sour cream" and sprinkle evenly with Alamo chili powder. Serve immediately. Enjoy!
