1 serrano pepper, sliced into rings and rinsed (divided)

3/4 cup grape tomatoes, halved

How to make it

Roast the cauliflower and corn: Preheat oven to 425u00b0F. Whisk together garlic, just 1 tbsp lime juice, 1 tbsp olive oil, a pinch of salt and pepper in medium bowl. Add cauliflower steaks to foil-lined baking sheet and coat with marinade. Add corn to other half of baking sheet, drizzle 1 tbsp olive oil and a pin

Mix the cabbage salad: Meanwhile, combine cabbage, just 1 tbsp lime juice, 1/2 tbsp olive oil, just half the serrano pepper. Season to taste with salt and pepper. Set aside and let rest at room temperature, 10 to 15 minutes.

Mix the bean salsa: Make small tear at top of bean bag and microwave for 60 seconds. Combine warmed beans, roasted corn, tomatoes, remaining serrano pepper, just 1 tbsp lime juice, 1 tbsp olive oil, and a pinch of salt. (TIP: You can also combine precooked black beans and 1 tbsp water in small sauce
