Ingredients
10 oz Boneless Chicken Breast Pieces
6 oz Lumaca Rigata Pasta
1 each Zucchini
2 clove Garlic
¼ cup Grated Parmesan Cheese
¼ tsp Crushed Red Pepper Flakes
4 oz Grape Tomatoes
6 tbsp Basil Pesto
2 tbsp Mascarpone Cheese
How to make it
1
Rinse and dry all produce. Halve the zucchini lengthwise and thinly slice crosswise. Halve the tomatoes. Peel and roughly chop 2 garlic cloves. Bring a medium pot of salted water (3/4 full) to a boil.
2
Heat a drizzle of olive oil in a large pan over medium-high. Spread the zucchini in an even layer and cook undisturbed 2-3 minutes until lightly browned. Add the tomatoes and garlic; season with salt and pepper. Cook stirring occasionally 2-3 minutes until softened. Transfer to a bowl. Wipe out the pan.
3
Add the pasta to the boiling water. Cook stirring occasionally 5-7 minutes until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
4
Pat the chicken dry and season with salt and pepper. Heat a drizzle of olive oil in the same pan over medium-high. Add the chicken in an even layer and cook undisturbed 3-4 minutes until lightly browned. Add as much red pepper flake as you like. Cook stirring occasionally 3-4 minutes until browned and cooked through. Remove from heat. USDA minimum: 165°F for chicken.
5
Add the cooked chicken, cooked vegetables, and half the reserved pasta water to the pot. Season with salt and pepper. Cook over medium-high, stirring constantly, 1-2 minutes until combined. Remove from heat and stir in the pesto and mascarpone until the pasta is coated, adding more pasta water gradually if needed. Taste and season. Serve topped with parmesan.

Blue Apron
Pesto Chicken Pasta

Blue Apron puts Pesto Chicken Pasta with with Zucchini & Tomatoes on the menu as a Poultry dish that holds up on a weeknight without asking much of the cook.

Pasta is a type of food typically made from an unleavened dough of wheat flour mixed with water or eggs, and formed into sheets or other shapes, then cooked by boiling or baking. Pasta was originally only made with durum, although the definition has been expanded to include alternatives for a gluten-free diet, such as rice flour, or legumes such as beans or lentils. [1]
