How to make it

Prep ingredients. Preheat oven to 425°F. Cut sweet potatoes lengthwise into ½-inch wedges. Slice ¾ of the onion through the root end into ¼-inch thick rounds, keeping slices intact. Grate remaining onion on the large holes of a box grater.

Make sweet potato fries. On a rimmed baking sheet, toss sweet potatoes with 1 tablespoon oil; season well with salt and pepper. Roast, tossing potatoes halfway through, until browned and tender, 20–25 minutes.

Shape burgers. In a medium bowl, combine ground chicken, grated onion, ¾ teaspoon salt, and a few grinds of pepper. Using damp hands, divide mixture in half and shape into 2 (½-inch thick) patties.

Cook onion & burgers. Heat 1 tablespoon oil in a medium nonstick skillet over medium-high. Add sliced onion and season with salt; cook until browned, about 3 minutes. Flip onions. Add patties on top of the 2 largest onion rounds, pressing down so the onions are embedded. Cook until browned, about 3 minutes. Stir to break up the loose onions on the side.

Finish & serve. Flip patties; top with cheese. Cover and cook until burgers are cooked through and cheese is melted, 2–3 minutes. Transfer to a plate. Top burgers with remaining cooked onions. Toast buns in skillet, cut side-down, until slightly toasted, 1–2 minutes. Serve onion chicken burgers with sweet potato fries alongside. Enjoy!
