3 oz Prosciutto
2 each Focaccia Sandwich Roll
2 oz Arugula
4 oz Fresh Mozzarella Cheese
2 tbsp Roasted Pistachios
6 tbsp Basil Pesto
1 oz Balsamic-Marinated Cipolline Onions
¼ tsp Crushed Red Pepper Flakes
How to make it
1
Preheat the oven to 450°F. Rinse and dry all produce. Halve the focaccia. Roughly chop the onions. Finely chop the pistachios. Tear the mozzarella into bite-sized pieces and place in a bowl. Add a drizzle of olive oil and as much red pepper flake as you like; season with salt and pepper, stir, and set aside to marinate at least 10 minutes. In a separate bowl, toss the arugula and onions with a drizzle of olive oil; season. In a third bowl, stir together the pesto, chopped pistachios, and a drizzle of olive oil; season.
2
Place the focaccia halves cut-side up on a sheet pan. Drizzle with olive oil. Toast 6-8 minutes until lightly browned and crispy at the edges. Transfer to a board. Air fryer option: 375°F for 4-7 minutes.
3
Build the sandwiches with the toasted focaccia, pistachio pesto, marinated mozzarella, prosciutto (torn into pieces), and dressed arugula. Halve crosswise and serve.
