Ingredients
10 oz Sustainably Sourced Sea Scallops
ยฝ cup Long Grain White Rice
10 oz Baby Bok Choy
6 oz Carrots
2 each Scallions
1 tbsp Sesame Oil
1 tbsp Sambal Oelek
2 tbsp Soy Glaze
1 tsp Black & White Sesame Seeds
How to make it
1
Rinse and dry all produce. Slice the scallions, keeping the white bases and green tops separate. Peel the carrots and thinly slice on an angle. Trim the bok choy root ends and roughly chop.
2
Rinse and drain the rice. Heat a drizzle of olive oil in a medium pot over medium-high. Add the white scallion bases; season. Cook stirring constantly 30 seconds to 1 minute until slightly softened. Add the rice and 1 cup water (2 cups for 4 servings). Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff. Add the green scallion tops and stir.
3
Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the carrots; season. Cook stirring occasionally 2-3 minutes until lightly browned. Add the bok choy; season. Cook stirring frequently 3-4 minutes until softened. Transfer to a bowl and cover with foil. Wipe out the pan.
4
In a bowl, combine the soy glaze, half the sesame oil, and as much sambal oelek as you like.
5
Pat the scallops dry and remove the tough side muscle from each. Season both sides. Heat the remaining sesame oil in the same pan over medium-high. Add in an even layer. Cook 3-4 minutes until browned. Flip and cook 30 seconds to 1 minute until cooked through. Serve the scallion rice topped with the cooked vegetables and scallops. Drizzle with the sauce. Top with sesame seeds.
