Preheat the oven to 450ยฐF. Rinse and dry all produce. Separate the bok choy leaves from the root; tear into bite-sized pieces. Coat the bottom of the tray(s) with sesame oil. Add the rice and mirin; season and stir. Add the bok choy on top in an even layer; season.
