How to make it

Position a rack at the top and preheat the oven to 425°F. Rinse and dry all produce. Cut the potatoes into 1/2-inch pieces. Cut the broccoli into bite-sized pieces. Halve, peel, and mince half the onion. Zest and quarter the lemon.

Cook the chicken until browned and cooked through, 3-5 minutes per side. USDA minimum: 165°F for chicken. Transfer to a cutting board. Wipe out the pan.

Stir in the stock concentrate and 1/4 cup water (1/3 cup for 4 servings). Simmer until slightly reduced, 2-3 minutes. Remove from heat and stir in the sour cream until combined. Season generously with pepper.

Toss the broccoli with the lemon zest. Thinly slice the chicken crosswise. Divide the chicken, potatoes, and broccoli between plates. Spoon the pan sauce over the chicken. Serve with the lemon wedges.
