3 tbsp Sweet Chili Sauce
4 oz Snow Peas
2 clove Garlic
2 tbsp Mayonnaise
2 each Scallions
1 tbsp Sambal Oelek
ΒΌ cup Cornstarch
1 tbsp Sesame Oil
3 tbsp Roasted Peanuts
1 tbsp Rice Vinegar
How to make it

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff and cover to keep warm.

Rinse and dry all produce. Peel and roughly chop 2 garlic cloves. Slice the scallions, keeping the white bases and green tops separate. Roughly chop the peanuts. In a large bowl, whisk together the mayonnaise, sweet chili sauce, vinegar, and as much sambal oelek as you like. Remove tough strings from snow peas if desired.

Heat the sesame oil in a large pan over medium-high. Add the garlic, white scallion bases, and snow peas; season. Cook stirring occasionally 3-4 minutes until slightly softened. Transfer to a bowl; cover with foil. Wipe out the pan.

Pat the chicken dry and place in a bowl. Season with salt and pepper. Add the cornstarch and toss to coat. Heat a thin layer of oil in the same pan over medium-high. When a pinch of cornstarch sizzles immediately, add the coated chicken in an even layer (discard excess). Cook undisturbed 3-4 minutes until lightly browned. Continue stirring frequently 3-4 minutes until browned and cooked through. USDA minimum: 165Β°F for chicken. Discard pan oil and transfer the chicken to the bowl of sauce; stir to coat. Taste and season.

Add the cooked snow peas to the pot of rice; stir. Taste and season. Serve the rice topped with the dressed chicken. Top with the chopped peanuts and green scallion tops.
