¼ cup Cornstarch
2 tbsp Hoisin Sauce
3 tbsp Roasted Garlic Onion Dressing
1 tbsp Sesame Oil
3 tbsp Roasted Peanuts
How to make it

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed. Fluff with a fork and cover to keep warm.

Rinse and dry all produce. Trim the bok choy root ends and thinly slice crosswise. Slice the scallions, keeping the white bases and green tops separate. Roughly chop the peanuts. In a large bowl, combine the dressing and hoisin sauce.

Heat the sesame oil in a large pan over medium-high. Add the sliced bok choy and white scallion bases; season with salt and pepper. Cook stirring occasionally 3-4 minutes until softened. Transfer to a bowl and cover with foil. Wipe out the pan.

Continue stirring occasionally 3-4 minutes until browned and cooked through. USDA minimum: 165°F for chicken. Discard the pan oil and transfer the chicken to the bowl of sauce; toss to coat. Serve the rice topped with the cooked bok choy and dressed chicken. Finish with the chopped peanuts and green scallion tops.
