2 tbsp Tomato Paste
2 tsp Honey
2 tbsp Grated Cotija Cheese
1 tbsp Ancho Chile Paste
¼ cup Sour Cream
1 each Single-Use Aluminum Tray
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. In the tray(s), combine the beef (torn into small pieces), tomato paste, honey, tomatoes, and as much chile paste as you like; season with salt, pepper, and up to half the spice blend. Stir thoroughly. Bake 15-20 minutes until the beef is cooked through. Stir, pressing down on the tomatoes to burst.

Meanwhile, add the corn to a microwave-safe bowl. Microwave on high 1-2 minutes until heated through. Let cool 3 minutes. Add the sour cream, cotija, and as much remaining spice blend as you like; season.

Wrap the tortillas in foil and warm on an oven rack 7-9 minutes, or in a damp paper towel in the microwave for 1 minute. Carefully unwrap. Build the tacos with the warmed tortillas, baked beef and tomatoes, corn salsa, and torn cilantro.
