Preheat the oven to 400°F. In a large bowl, whisk together the jerk sauce, honey, and 2 teaspoons water (4 tsp for 4 servings). Pat the steaks dry; season with salt and pepper. Add to the marinade and turn to coat. Set aside to marinate, turning occasionally. Slice the scallions, keeping the white bases and green tops separate. Quarter the limes. In a bowl, combine the mayonnaise and the juice of 2 lime wedges (4 wedges for 4 servings). Add the cabbage and carrots and white scallion bases; season if desired and stir.

In a bowl, combine the biscuit mix, sour cream, green scallion tops, and 1 tablespoon water (2 tbsp for 4 servings). Gently stir until just combined — do not overmix. Lightly oil a sheet pan. Scoop 2 equal dollops (4 for 4 servings) onto the pan. Bake 12-16 minutes until set and cooked through. Let stand 2 minutes.

Heat a drizzle of olive oil in a nonstick pan over medium-high. Add the marinated steaks (reserving the marinade). Cook turning occasionally 5-8 minutes until lightly browned. Add the butter and reserved marinade (it may spatter). Cook, spooning frequently over the steaks, 1-2 minutes for medium-rare (125°F) or to your desired doneness. USDA minimum: 145°F for steak. Serve the steaks (with any pan sauce) alongside the baked biscuits and slaw. Offer the remaining lime wedges on the side.
