3 tbsp Sweet Chili Sauce
2 tbsp Mayonnaise
3 tbsp East Asian-Style Sautéed Aromatics
1 each Jalapeño Pepper
1 each Persian Cucumbers
1 tbsp Rice Vinegar
¼ cup Panko Breadcrumbs
1 tbsp Sugar
3 tbsp Roasted Peanuts
How to make it

Preheat the oven to 450°F. Rinse and dry all produce. Peel the carrots and grate on the large side of a box grater. Halve the cucumbers lengthwise and thinly slice crosswise. Roughly chop the peanuts. Stem the peppers, halve lengthwise, seed, and thinly slice crosswise. Wash your hands immediately after. In a bowl, stir together the mayonnaise and sweet chili sauce.

Rinse and drain the rice. Combine with a big pinch of salt and 1 cup water (2 cups for 4 servings) in a medium pot. Bring to a boil, reduce to low, cover, and cook undisturbed 13-15 minutes until absorbed and tender. Fluff with a fork and cover to keep warm.

Line a sheet pan with foil. In a bowl, combine the pork, breadcrumbs, and sauteed aromatics; season with salt and pepper and gently mix to combine. Shape into 10 tightly packed meatballs (20 for 4 servings) and place on the pan. Bake 14-16 minutes until lightly browned and cooked through. USDA minimum: 160°F for pork.

In a bowl, whisk together the sugar and vinegar with salt and pepper until the sugar dissolves. Add the grated carrots, sliced cucumbers, and as much pepper as you like. Set aside to marinate at least 10 minutes, stirring occasionally; taste and season. Serve the rice topped with the meatballs and pickled vegetables. Drizzle with the sweet chili mayo and scatter the chopped peanuts on top.
